I have been a little out of the loop this last week. With the birth of my first grandson last week, it has been a whirlwind. I’ve been having a hard time trying to decide what to write about. I’ll get back in the groove soon enough, I’m sure. Good Dee’s is my favorite go to mix for everything. I have tried the brownies and the blondies. This week I tried the new Chocolate Snack Cake Mix and the new Muffin Mix. The Chocolate Snack Cake was featured in my October Keto Krate.
With this mix, you add eggs, vanilla and butter. I made mine into cupcakes because that’s better portion control for me. I topped mine with Low Carb Maven’s Low Carb Sugar Free Cream Cheese Frosting. I had my daughter (who just had the baby and is not low carb) try them and she gave them 2 thumbs up. They taste just like a normal non low carb cupcake. So moist and delicious. They are gluten free, sugar free, soy free and grain free. The snack cake is 1 gram of net carb per serving. See why I made them into cupcakes? I can have 1 cupcake with the frosting for 2 net carbs. Score!
Next I made the Muffins. This is a basic muffin mix that you create whatever muffin you want. You add eggs, coconut oil and vanilla and whatever sweetener you choose. I chose to not sweeten mine. I find that it’s sweet enough on it’s own. I added pumpkin pie spice and walnuts to this mix. Can I say breakfast for days? So good. These are 2 net carbs per muffin and are also gluten free, sugar free, soy free and grain free.
